What makes Pad Thai taste like the real thing? Grandma always said it starts with love and a very hot wok. I grew up watching her cook Pad Thai in a small kitchen. She made it look so easy. Now I want to share her easy Pad Thai recipe with you — simple steps, real Thai flavor.
A Memory from Grandma’s Kitchen
Grandma told me that Pad Thai has a long history. It started in Thailand a long time ago. At that time, rice was expensive. The government wanted people to eat noodles too. So Pad Thai was born.
“Everything in Pad Thai is Thai,” she said. “The noodles are made from rice. The sauce is made from tamarind and fish sauce. Nothing is wasted.” I loved listening to her talk about food.
Her Pad Thai always tasted the same — sweet, sour, and salty. The secret was her sauce. She made a big pot of sauce and kept it in the fridge. Any time she wanted Pad Thai, she was already half done.

What You Need (Ingredients for 1 Person)
Noodles
- 100g thin rice noodles (เส้นเล็ก) — flat white noodles, 3-5mm wide
- Soak in warm water for 20 minutes before cooking
Protein
- 1 duck egg — Grandma used duck eggs. The yolk is richer and more orange. Chicken egg works too.
- A small handful of dried shrimp (กุ้งแห้ง) — use small, thin dried shrimp
For the Wok
- 2-3 tablespoons cooking oil
- 2 shallots (หอมแดง) — cut very small
- 2 tablespoons sweet preserved radish (หัวไชโป๊หวาน) — cut small. Use the sweet kind, not salty.
- 50g firm tofu (เต้าหู้แข็ง) — cut into small squares
Vegetables
- 1 cup bean sprouts (ถั่วงอก)
- 3 stalks Chinese chives (ใบกุยช่าย) — cut into 1-inch pieces
Sauce
- 3-4 tablespoons Grandma’s Pad Thai sauce (see recipe link above)
Toppings
- Crushed roasted peanuts
- 1 lime — cut into pieces
- Dried chili flakes — only if you like spicy food
🧡 Grandma’s note: “Always fry the tofu before you cook. Fry it until the outside is firm. Then it will not break in the wok.”
Easy Pad Thai Recipe — Grandma’s Way (Step by Step)
Before you start: Fry the tofu in oil until the outside is firm. Put it aside. Fry the dried shrimp quickly in the same oil. Put it aside too. Keep the oil — it smells wonderful from the tofu and shrimp. You will use it to cook the Pad Thai.
Grandma always said: “Never throw away the frying oil. It carries all the good smells.”
Step 1: Heat the wok Put the wok on the stove. Use high heat. Add the frying oil.
Step 2: Cook the egg Add the duck egg to the hot wok. Let it cook for a few seconds. It does not need to be fully cooked. Put it in a bowl and set aside.
Step 3: Cook the aromatics Add shallots and sweet preserved radish to the wok. Stir for 30 seconds. You will smell something very good.
Step 4: Add tofu and dried shrimp Add the fried tofu and dried shrimp. Stir for 1 minute.
Step 5: Add the noodles and sauce Drain the soaked noodles. Add them to the wok. Pour the Pad Thai sauce over the noodles. Mix well. Cook for 2 minutes.
Grandma always said: “High heat is everything. Low heat makes the noodles wet and sad.”
Step 6: Add the egg back Add the egg back to the wok. Mix it into the noodles gently.
Step 7: Add the vegetables Add the Chinese chives and bean sprouts. Stir everything together. Cook for 1 more minute.
Step 8: Serve Put the Pad Thai on a plate. Add crushed peanuts on top. Put a piece of lime on the side. Squeeze the lime over the noodles before eating.
Grandma’s Secret Tips
- Make the sauce ahead of time. Keep it in the fridge. You will always be ready to cook.
- Always use high heat. The wok must be very hot before you add anything.
- Fry the tofu first. This makes it firm. It will not break when you stir.
- Soak noodles in warm water, not boiling water. Boiling water makes them too soft. They will break in the wok.
- Cook one serving at a time. Do not put too many noodles in the wok at once.
- Keep the frying oil. It carries the flavor of the tofu and shrimp.
